Got a Glut! Courgette recipes here

WPA Carol Terry writes in with recipes for courgettes.  She says, ‘Lots of people have a glut of courgettes at this time of year, so here are a couple of recipes to use some.  These are tried and tested recipes, I have done them quite a few times now so I know they work.’

Here is Carol’s recipe for Courgette Cake...

Courgette cake
It makes a HUGE cake and it is absolutely delicious, lovely and moist

435g SR Flour
1 tsp salt
1 tsp baking powder
Generous grating of nutmeg
3 tsp cinnamon
150g chopped walnuts
200 ml sunflower oil
250g unrefined golden caster sugar or use soft brown sugar
300g grated courgettes, skins off
3 eggs, lightly beaten
3 tsp vanilla extract

Line a large cake tin, I use my 10 inch Christmas cake tin, with greaseproof paper or baking parchment.  
Put all ingredients in a large bowl and mix together gently until all combined.
Pour into the tin.
Cook 30-40mins at 180 degrees, test with skewer to make sure it is cooked through.  

and here is Carol's tasty frittata recipe....

Courgette Frittata
375g courgettes
1 large onion
1 carrot
3 rashers bacon
1 cup grated cheddar
1 cup SR flour3 eggs, lightly beaten
Quarter cup sunflower or olive oil
5 eggs
Salt and pepper

Fry or grill bacon till crisp and chop coarsely. 
Grate unpeeled courgettes coarsely
Finely chop onion and carrot
Combine all these ingredients with chese, flour, oil and lightlly beaten eggs.                                                                                                                      Season with salt and pepper

Pour into well-greased tin (base measuring 16cmx26cm)

Bake in moderate oven 30-40 mins till cooked through and slightly browned.  Once again, I cook this in my lower oven at about 120 degrees and it takes about an hour or more.  It just needs to hold its shape and start to brown on the top.

Serves 4-6.  Great with runner beans.  Good cold for picnics.  I like it served at room temperature or slightly above, served with salad.  You can cook it the day before and it is a really good lunch dish, so easy, and quite impressive served wit a nice salad and maybe some crispy French bread.
